Early Thanksgiving

It’s so hard to believe that it is Thanksgiving week! I say this often, but time flies so fast. I feel like it should barely be November let alone Thanksgiving.

My son works on Thanksgiving and Black Friday, and well just about every other day this week. His only day off is Tuesday, and that could be taken away if the freight truck comes in early at the Rite Aid he works at. So, I am making our special dinner tomorrow instead of Thursday.

As many of you know (I have complained about it often enough!) our power is messed up royally. I can’t use the oven at all, as that is a sure way to blow out the power. I have had decent luck with using the burners on the stove, though, and I have my trusty Instant Pot. We aren’t huge fans of making an entire turkey anyway, so I got a small ham to fix. It will take about sixteen minutes in the Instant Pot. I can do that! I will set a reminder to take a picture of it. I also have a large toaster oven, so I will make a pie and some rolls in there. We will have mashed potatoes and canned gravy. I suck at making gravy lol. I can make stuffing in the microwave. So, there we have our special meal! Easy to do and it’s all things my kids will actually like. A win-win situation.

In other news, the electrician is due to replace the power box on December 10th! We will be without power for the entire day, and it will be chilly, but very exciting. I’m sitting here and wondering what life will be like when I can turn on an overhead light. After four months of darkness and carrying a flashlight everywhere I go, it will be so strange. It’s funny how fast you can adapt to situations like this. I am going to keep hand washing some of the laundry as I have found I get them cleaner that way than using the machine! I will use the machine for the heavier things, like towels, sweats, and jeans. The washing machine is over twenty years old and I think the agitator isn’t working as well as it could. I actually like washing dishes and the clothes by hand in the winter. The warm water is so nice on my hands!

  1. Happy Thanksgiving! And I am so glad to hear your news about the power box. I’m having pot roast for Thanksgiving and I plan to make dumplings too. I don’t have an instant pot but the crockpot will do a fine job.

  2. Glad to hear the time is getting closer to when you will have the electricity working correctly again. Good job figure out what sounds like will be a delicious Thanksgiving dinner.
